Cyan tea  青茶 [qīng chá] ( well known as “Oolong tea乌龙茶 [wū lóng chá] )
 

  1. Appearance
Before brewing,  the leaves have dark green to brown colour are mostly dark green to brown. The most famous Oolong tea “Tie Guanyin” resembles like  small balls.
After brewing, the original complete leaf shape is often visible again. This is certainly the case for “Tie Guanyin”.

 
  1. Taste  
The smells and tastes are very strong. Some smell like fruits or honey. Some smell like rock or willow. Some taste fresh and light, others taste dense and sweet.
 
  1. Features
Oolong tea is semi fermented (30%-60%). In some ways it has features common to green tea or black tea. ”Tie Guanyin” for example is extremely fragrant. And in the ”Tie Guanyin” type itself, you can find more than a dozen of different flavours.
 
  1. Functions

  1. Brew temperature
 It depends on the different types, a temperature between 90 -100°C is preferred.
    
  1. Main types
Shui Xian, Tie Guanyin, Huang Dan, Ben Shan, Mao Xie, Wuyi Yancha, Dongding Wulong, Rou Gui, Qi Lan, Luohan Chenxiang, Fenghuang Dancong, Se Zhong.
  1. Famous varieties
Wuyi Yancha, Tie Guanyin, Fenghuang Dancong, Taiwan Oolong tea.
