White tea  白茶 [bái chá]
 

  1. Appearance
The fresh tea leaves are white. They have to be harvested when they are opening in spring. This results in white fluffy half open leafs.
Before brewing, dry tea leaves are mostly jade green or dark green with white fluff.
After brewing, tea soups become light green to brown. The tea leaf shape is straight and even, sharp and flat.

 
  1. Taste  
White tea tastes extremely fresh, lightly sweet and can have a bamboo smell.
 
  1. Features
This tea is mildly fermented (20%-30%). As start material new buds are used from the white tea tree. White tea keeps most natural substances. It has the name “bamboo in the snow”, according to its shape.

It depends on the different types, a temperature between 80 -100°C is preferred.
